Borscht

Aly loves just about anything I make. It's so nice because Nathan, AND Cole, AND Hallie won't eat most anything I make. So, I found a recipe for Borscht that is nice and easy. Aly and I LOVE it and we're perfectly happy - heck, even Nate likes it. I like to let Cole and Hallie sample it when we eat it in hopes that they'll fall in love with it - at least before they are adults. Hey, I promised them, and who am I to break a promise to the sweet little monkeys? So, if you're all ready, introducing the food of the day... (drum roll, please)...

Borscht

3 cups chopped cabbage
1/4 cup margarine
1 (16 ounce) can sliced beets
1 (48 fluid ounce) can beef broth
2 TBSP lemon juice
1/2 teaspoon ground black pepper
1 cup dairy sour cream

In large saucepan over medium high heat, cook cabbage in margarine until tender. Drain beets, reserving liquid; chop beets. Stir in beef broth, beets with liquid, lemon juice and pepper. Heat to a boil; reduce heat. Simmer 15 minutes. Serve with dollop of sour cream.
Makes 8 servings.

Yummy, I love love love borscht and this is a easy looking recipe that I will have to try! thanks for sharing.
